SAPPHIRE - A GEM OF A DINING EXPERIENCE
On January 15th Anguilla welcomed another fine restaurant to the island's growing collection of unique dining experiences. Sapphire, overlooking Maundays Bay, serves up a delectable menu in a comfortably elegant atmosphere.

Formerly of Cap Juluca's Pimms restaurant, owner Pedro Marlin and chef Rexford Fleming teamed with Anthony Bryan, formerly of Cap Juluca's George's restaurant, to create this gem of a place. The brilliant blue and white d�cor lend a crispness to the comfortable setting and moderate pricing combined with excellent food and will ensure Sapphire's popularity among visitors and locals alike.

The menu is a creative fusion of Caribbean and European culinary styles with a heavy focus on seafood. Mr. Fleming combines capers, fresh lemon and tomatoes to create a delicious Anguilla Crayfish Salad appetizer. Palate pleasing entrees such as Lobster Ravioli served with a light bisque sauce and Herb-crusted Veal Medallions with fresh local vegetables are available, and the Warm Fruit stewed in Napoleon Brandy served with vanilla ice cream makes for a perfect ending to a fine evening. 12 noon until 3pm and from 7pm until 9:30pm.
